2 Tbsp. Alum (found in the spice section in grocery store)
1 1/2 C. boiling water
Pancakes
1 1/4 Cups Sifted Flour

1 TBSP Sugar
1/2 tsp. Salt
1 Beaten Egg
1 Cup Milk
2 TBSP Salad Oil
Sift together dry ingredients; combine egg, milk and salad oil. Add to dry ingredients, stirring till just moistened.
Bake on a hot griddle. Use 1/4 cup; dry measuring cut as a ladle. This will give more uniform pancakes. For dollar size pancakes use a tablespoon to measure.
To test heat of griddle sprinkle with a drop of water. If drop dances, heat is just right.
When upper sides of pancakes are bubbly all over, a few bubbles have burst and edges appear dry, cakes are ready to turn.
A quick flip with a broad spatula makes the job easy!
Turn only once.
