The fifth-graders at Blue Grass Elementary are collecting sap from sugar maple trees. They learned about where the sap comes from and how the trees can be tapped. They tapped eight trees and are recording their findings in workbooks every couple of days. The sap is then turned into syrup. This year’s sap is running a little bit over 2% sugar. The majority of the water is evaporated from the sap to make the sugar level about 67%. The students will get to try a final syrup product in a couple of weeks.
